There’s a difference between a few tweaks and corrections and retconning an entire era.Star Wars never respected previous lore, the oldest expanded universe is after based on a toy line and ewok cartoons. Filoni just played the game right and protected his up, knowing that Ahsoka would be used to spring board into other shows as she grew older. (creating a world between world's just to delay her aging was a merch master stroke)
As for Luke being disrespected, I feel like they stayed true to the EU stuff, the guy becomes disillusioned or a recluse like three times in the books. Episode 9 was hot garbage, but personally I blame episode 8 for not focusing on the contrasts between his and Snoke's training.

Frankly Anakin’s swift character growth from Attack of the Clones Anakin to ‘Clone Wars Anakin’ makes little sense. Time in starwars is both a limitation and a plot hole. At best it forces you to kill off cool characters, make them fuck off in cliched ways or play rules lawyer in order to preserve something Yoda said, at worst it leads to people constantly rehashedls the same stories and returning to the same periods over and over.

With that said, Leia being the mentor is not really a bad idea. Unfortunately she died halfway through production of 8,and because Abrams was butthurt that episode 8 threw away his ideas, he tacked on the deleted stuff from episode 7 in the hopes that her passing would generate more interest.
