They pillaged the seas in their economic zone and are assaulting economic waters of other nations for some time now. Pitched battles between Chinese fishermen and Korean coast guard are regular occurence, with coast guard suffering dozens of wounded every year and so far one dead. Argentinians sunk a Chinese fishing a few years ago, but it ain't stoping them. And this is nations that defend their waters, seas of smaller nations are getting pillaged.

Last I was in college, we talked a lot about how the Chinese were more-or-less smashing our coral reefs and how there was some oil rich territory that we could have technically owned but the Chinese were claiming over it

To be fair, everyone in Asia has conflicting historical territorial claims. China's not even the worst when it comes to making bullshit claims on everything; Japan still takes the cake there.

Think about proximity -- China is the historically established big bad when it comes to Vietnam, but Japan is the historic big bad when it comes to Korea, *especially* with the absolutely brutal occupation followed by so much of Japan's behavior ever since being, "Ha, we can be unrepentant assholes about all of this because the West likes us better! Watch us gleefully provoke you and then claim you're being racist for being provoked!"
Oh,trust me, having been through the Korean war museum, a place that shows the whole history of the Korean peninsula and its wars.
Japan invaded Korea WAY before their occupation and was beaten back, as was when the Koreans tried to invade Japan. Then came the 1800s when Japan became a power house and occupied Korea via invasion. Korea was just starting to become its own modern area when Japan invaded. They were Japan's first stake in the mainland of Asia

May I ask what you are basing that off of? Quick read online shows that China is way ahead of Japan in terms of ongoing territorial disputes right now.
Korea and Japan have a lot of historical disputes, as do any countries they conquered during WW2

And can you name me those? Not disputing that they exist, just asking you to name them.
There is a area south of both Korea and Japan both claim, currently they have a treaty about it. Multiple islands to the south of both. Places like Okinawa for instance were not ALWAYS apart of Japan. Multiple parts of the ocean they conflict with nK and China as well.

The ones I was personally aware of was regarding the Kuril, Dokdo, and the Senkaku/Diaoyu islands, with the Okinotori Reef thrown in there (alternatively Okinotori islands, depending on whether you are in Japan or not.) Are those the proper names for the disputes you've mentioned?
