Just curious as, at beginning of each quarter, I go through and remove most of the stuff in my back, eat whatever food was there and replace it so make it stay fresh, and otherwise make sure it's up to date.

For my own I have:
half a dozen energy bars
small package of hard candy
four bottles of water
1 liter of Everclear
a mylar rain poncho and blanket
nylon rope
first-aid kit
Zippo lighter (will light with Everclear, I tested it)
beer can stove (will burn with Everclear, I tested it)
Altoids tin of home-made tinder, cotton balls soaked in melted Vaseline and wrapped in packets of waxed paper. Each one burns fiercely for a couple of minutes.
One Hundred Dollars in small bills.

This time I'm wondering if I need to expand with the way the world is going and wanted to see what other people have in theirs.

Might be a cliche answer but Duct/Gaffer tape would be a good one, it can be used for all kinds of situations, anything from plugging leaks to wrapping wounds to creating a lure trap. Several small handkerchiefs or other fabric of about the same size, box of waterproof matches (yes you have a lighter but if the fuel is contaminated or the sticker is damaged you have a back up. Multitool or leatherman in a pouch.

All of that would easily be backed into the bottom of a bag, the smaller items in the gap in the centre of the tape except the tool which you put in a pocket or belt (which is a necessary item of clothing)

You should look into emergency kits used in different wars by each country, there's a lot of thought gone into those that could inspire you.
