IIRC the Enterprise-A didn't exhibit radically different capabilities than the first so it should be able to complete the remaining ToS movies.

The problem with using the Enterprise-A past the ToS era is that Starfleet's enemies get way more formidable. In Yesterday's Enterprise, the Enterprise C got blown up by Romulan Warbirds in 2344, and then you had the timeline where the Enterprise-D - which was outfitted for war - was destroyed by three Klingon Warbirds in 2366. And then you had the Dominion War where there are a couple shots where you see galaxy class starships being torn apart like tissue paper. If new, top of the line Starfleet vessels are struggling to keep up then I would imagine a century's old ship would get crushed. I do not recall ever seeing a Constitution class past Undiscovered Country. In TNG and DS9, the oldest class seen on the frontlines of the Dominion War was the Excelsior. Otherwise it was just used as transport for old admirals. Miranda class ships by the time of TNG are just used for safe missions deep within Federation territory or for training exercises. If the TOS Enterprise was still being used past TOS then it would probably be relegated to being a messenger, a training ship, or running easy missions deep within the Federation. It would never be brought out to any confrontation with a peer power to the Federation.

They wouldn't keep using it. In ST3 Scotty was told that there would be no refit because the hull was too old. Mirandas serve longer, but they probably aren't engaged in continuous high intensity service for forty years. When the structure has been under service stresses for that long you may as well build a new ship and if you're building a new ship you may as well make it an Excelsior.

If Kirk doesn't steal the Enterprise or returns it intact it either winds up like Warspite or like Victory. Either an earlier Excelsior class vessel gets the Enterprise name or no other ship ever gets the Enterprise name because it remains forever the ceremonial flagship.

I think it is said that the last of the Connies left frontline combat duty in the 2310s. With maybe one lingering on to the TNG era as a training ship.
