The Romulan Bird of Prey fired the Torpedo at impulse. The Torpedo jumped to warp. The Enterprise responded by jumping to warp to gain distance from it. It still almost ran the Enterprise down which is quite a feat in and of itself.

Too bad for the Imperium Starfleet can launch these weapons at Warp Speed and the Imperium's fleet would hit jack and shit being only speed of light weapons. Warp Strafing is a thing in Star Trek.

You haven't watched any TOS, TNG, Voyager or DS9 have you. Shoot a large part of many episodes is using Treknobabble to fubar an enemy ship.

Bigger does not always mean better. The Deathstar was freaking huge. And one X Wing with a Proton Torpedo still took it out. Once you find a ships weakness you can destroy it. And Starfleet sensor tech can find weaknesses really good.

Don't forget cloaked Replicator mines can be placed in various systems as a booby trap of sorts. Any enemy ship that blunders into one is gonna have a bad day depending on the warhead assigned.

If Starfleet really got pissed and morals are turned off. They could destroy every star in every system the Imperium of Man controls and It would be trivially easy to do. Just drop out of warp. Fire a few Nova inducing torpedoes at the star then warp out. No need to even stick around in system...

They are. Even in TNG you can see instances when even the Enterprise D could turn on a dime when it needed to.
