I think beyond-trilogy book series can work, but a trilogy of novels is about as far as you can push a single coherent narrative arc.
C.S. Lewis' Narnia books are a pretty solid example; there's seven books, but they aren't a single narrative arc -- The Lion, the Witch, and the Wardrobe, Prince...
