The reason whoring is traditionally seen as immoral is because intimacy with another human being is one of the most important facets of our nature. It's not something to be exchanged for something as base as money.

You can respond that whoring is never going to go away, and you're right. We'll never be able to eliminate it, but that doesn't mean we need to give it a dignity it doesn't deserve. Names are important.

Sex working is first of all, a set of varioust types of work, including prostitution, stripping, phone sex, porn, camming, etc. Sometimes people use it to include jobs related in the sex industry, including jobs that facilitate the above, like operating a website that provides porn, or filming porn. Second of all, the use of the word 'work' implies that members of this group are voluntary, not slaves.

That's why you use the term, because you want to refer to a bunch of jobs, mostly legal with one exception (prostitution), and all relatively equal in regards to morality/immorality. This calls attention to the discrepancy in the legal sense.

On the contrary, that is why you should not use "sex worker" as a synonym for "prostitute" - because by your definition, it isn't.
This looks like a case of wanting to replace a simple plain old word that has a clear meaning, with a phrase that is deliberately blurry in meaning.
