Does it even make sense he could crush the darksaber, power armor or not? Shouldn't that thing be made of super-beskar and functionally indestructible given how famous it is?

That is the same thing I was wondering.
Then again we never really know what it is made out of.

But I think they destroyed it so that way a new form of rule is formed instead of relying on such a stupid means to he mandalore

I'm more worried about Bo's hand; Gideon probably crushed more than a couple bones in her hand when he destroyed the Darksaber.

Between Rebels and The Mandalorian, I’m now semi-convinced that Filoni is not a very good writer.

The buck stops somewhere but I'm not sure if it stops with Filoni. There is so much we don't know...

Like... was Grogu supposed to come back for Season Three?
Was The Book of Boba Fett supposed to dedicate a third of its season to The Mandalorian (the answer is no or retardation).

If neither of the above happened, would we of had literally six episodes of the most safe, lazy mostly filler content for Season Three?

Rebels is tough. I haven't seen all of Clone Wars but I did watch through all of Rebels. It was super kiddie in the beginning, matured into its own thing and then got kind of weird right towards the end with Ahsoka dying/coming back and Wolf Kanan and interdimensional stuff and Ezra mastering the Lore of Beasts etc. And people can disagree on the portrayal of Thrawn or whatever but I don't think he was poorly written as a character inasmuch as some people might not feel he was faithful to the EU Thrawn.

Rebels clearly had Disney mandate to make a more kid friendly show than Clone Wars had turned into. As such much of the toning down of things from Clone Wars clearly was corporate mandate over Filoni. Corporate censorship is clear throughout the entire series, from Ezra sticking with his stun weapon for so long to a bunch of the small things like how combat was portrayed.

I personally liked Rebels quite a bit, having watched it both as it aired and rewatched on Disney+. I think it holds up to a rewatch as a whole better than Clone Wars does (look, I know that sounds sacrilegious, but seriously S1 of Clone Wars is ROUGH to watch not just from storytelling but also animation quality and style... it took time for them to get their stride and figure out how to pace things and animate them, and a lot of folks forget how Ashoka was actually somewhat the annoying kid sidekick in that season and was arguably more annoying than Ezra ever was in Rebels).

But then, I'm the guy who thinks Rebels is much more Star Wars than Andor, and whom didn't hate Book of Boba Fett as much as the fandom (likely helped by the fact that unlike so many other SW fans I felt Fett was an overrated character and I never got into the EU stuff so I never felt "betrayed" by how Fett was portrayed in that series, he was consistent with his portrayal in Clone Wars, the movies, and in Mando). I also think Rogue One was overrated and felt the entire "making the Rebels look more gray" in that movie was rather contrived, though Rogue One at least did feel like Star Wars aside from that.
