I'm pretty sure they were not jury rigged, but meant to be used like that from the start. The "stock" is actually a carrying holster that doubles as a stock. There was also an "artillery Luger" with looong barrel, but IIRC meant for artillery rather then as artillery.
I think the Stiechkin Automatic Pistol also has a wooden stock like that in some variants.

Yes, the first Stechkin variants had a holster stock, like C96, but in later variants they replaced it with detachable vire stock that can be left home and holster was redesigned to be less annoying to the user.
